Last week, my wife (tuleva ex-vaimo) and her new man hacked my Apple ID. I got it back with help from the police and Apple, and everything is good. My new password is so strange that I don't even remember it. Lol.
Anyway, her iPhone and iPod Mini have music from my iTunes library (900+ songs, apps). I want to make it impossible for her steal or use those songs.
How do I do that? Meaning, erase some user from MY iTunes account? Any help would be totally appreciated.

Short answer: Without physical access to the devices, no chance.
In legal terms, you shouldn't have copied those songs or apps on her phone in the first place and this is the price you'll be paying. While iPhone can be erased remotely using iCloud and Find My iPhone, there is no such feature for iPods. If someone has physical access to the iPod, you simply cannot prevent them from copying the songs from it. Same goes with the iPhone unless you can erase it remotely using iCloud. And since it's her phone and not yours, you should have no way to erase the phone. Besides, erasing her entire phone would be a crime since the phone and its data is her property, excluding the aforementioned songs and apps. There is a thing called de-authorisation but it is for computers only and even that would only prevent the playback of DRM-protected songs.
If the phone and iPod were synced to your computer and not theirs, the music should be deleted automatically anyway if/when they sync the devices with their own computers. Copying songs out of an iPod/iPhone to a non-authorised computer is not exactly a walk in the park; while not really difficult at all, it still requires a little bit of knowledge and special software and there should be no way to do it accidentally.

She no longer has access to my MBP in order to be able to update her iPhone - I have changed the Apple ID name and password, and she will never figure that out.
Ironically, I could delete her iPhone in a heartbeat... I created the account for her. She does not even know what her own Apple ID or password is, and Find My iPhone is ON in her iPhone. However, I have enough respect for HER phone that I will not make a mess of that.
Her Apple ID (connected to her iPhone, etc.) is her old work e-mail address. That address will be turned OFF on Monday morning. I guess then she will have to figure out WTF to do on her own.
Apple is going to call me this afternoon and send me all of the details about the attempted ID theft of my Apple account. Then on Monday, I will go to the police.
Shit happens.

Remember also change the answers to your security questions or they can hijack your account again. Resetting Apple ID is currently way too easy because Apple hasn't yet introduced two factor authentication in this region. Answers to your security questions should also be not guessable even if that means you need to write them down somewhere.
As atheos pointed out, there is not much you can do about the non-drm music. De-authorizing all devices linked with your Apple ID is a good way to make sure that if they ever try to reset the devices or sync with a new computer they also lose access to all that content.
Edit. Of course you could inform her that you will wipe the devices and she should back up her own data, but unless the accounts on the devices are locked she could just turn Find my IPhone off.
